S said he would just like something simple, because he would feel a little guilty that I had to spend so much time and energy making dinner on a busy weekday. And then I served this last night.

A bowl full of everything like this is really really simple to make. First cook rice in a non-stick frying pan. Stir-fry chopped onion in soy sauce and Shaohsing rice wine mix (2:1). Add in sugar and water when onion softens and leave it to simmer. Pan-fry fresh mackerels (skin side down) for just 1 minute before pouring in the well simmered sauce just to drown the surface of the fish. Simmer for about 10 minutes. Meanwhile, stir-fry sprouts and chopped oyster mushrooms with a little olive oil in a separate pan till they deflate a bit. Add in the rest of the sauce to simmer for 5 minutes. Put together rice, fish and sprouts and mushrooms to put a big smile on S’s face!
